Smoked Herb Chicken
Great way to smoke a chicken. Super moist, lots of flavors.

Ingredients

- 1 tbsp garlic powder
- 1 tbsp pepper
- 2 tbsp salt
- 1 tbsp sugar
- 1 whole chicken
- 1 tbsp basil
- 1 tbsp parsley
- water
- 1 tbsp butter
One of the better, smoked herb chicken recipes I have made.
Method

Mix (1 tbsp) sugar and (1 tbsp) salt into water deep enough to submerge the whole chicken. You need to store the chicken in the fridge in the water bath overnight (24 hours).

Cut the spine out of the chicken so you can spread it flatter. You can do this by cutting on the left and right of the spine, then just pulling it out. This will give you a lot more surface area to smoke.

Preheat smoker to 225 F (107 C)

Apply the (1 tbsp) salt, (1 tbsp) pepper, (1 tbsp) basil, (1 tbsp) parsley evening across the top and bottom of the bird. Cut the skin on the thighs and insert a small piece of butter under the skin on each side.

Place the chicken in the smoker. Cook for ~5 hours or when the wings hit 175 F (80 C) and the breast is 166 F (74)
