Nathan's Loco Moco

Ever had a Loco Moco in Hawaii? Amazing right? I enjoyed many of them while I was recently there. This is my interpretation of a non-traditional way to make a lighter yet true to form Loco Moco with a twist.

Ingredients

Serves 2

  • 1/2 cup white rice
  • 1 avocado
  • 1/4 tsp Cayenne pepper
  • 1/2 tsp salt
  • 1/2 tsp lime juice (half a lime)
  • 2 medium eggs
  • 1/2 lb beef (85% fat)
  • 1/2 tsp pepper
  • 1 tsp ketchup
  • 1 tsp mayonnaise

I have been experimenting with Loco Moco's. This one is super flavorful a family favorite. I am using some California influence on this while trying to not stray too much from the concept of a Loco Moco. Hope you like it.

Method

    Step 1

    Cook your rice, set aside.

    Step 2

    Mix the (1) avocado, (1/4 tsp) Cayenne, (1/2 tsp) lime, (1/2) tsp salt into a small bowl. Mash and combine. Make sure its completely mixed up and smooth with small chunks of avocado.

    Step 3

    Place 2 tbs of rice on two plates, then scope half the avocado onto each plate on top of the rice.

    Step 4

    Make 2 1/4 lb beef patty apply the (1/2 tsp) pepper. Cook the patties ~2-3 min aside or until internal temperature is 155 degrees (medium). Place the burger on the avocado

    Step 5

    Put 1 tsp mayonnaise and 1 tsp ketchup on the burger.

    Step 6

    Cook 2 eggs over medium. Then place on top of the burger.
